This recipe celebrates all the goodness of winter, the season of the kidneys and time to regenerate and nourish our root Qi! It incorporates the deliciousness of comfort food with my favorite tasty root vegetable and seaweed to help nourish blood and strengthen the kidneys. Plus it’s red to celebrate Chinese New Year! Hope you enjoy this treat and good luck in the Year of the Dragon!
2 whole cooked beets (you can steam or roast)
1/2 tsp tarragon
1 tsp lemon juice
1/2 sheet of nori toasted
Sauce:
1 tbsp oil
2 tbsp flour (rice, amaranth, garbanzo, or whole wheat)
1 cup water, broth, or almond milk heated dash of nutmeg sea salt, miso, or soy sauce to taste
Heat oil in saucepan. Stir in flour. Whisk 1-2 minutes over low heat. Remove from heat and add heated liquid, stirring until smooth. Return to heat and add seasonings. Bring to almost boil, turn to low heat and simmer until thickened.
Slice beets into rounds. Mix with sauce, tarragon, and lemon juice. Heat thoroughly before serving. Sprinkle toasted nori on top by rubbing sheet between hands to flake. Serves 4.
